White Chocolate Chip Macadamia Nut Pudding Cookies

- 4½ cups all-purpose flour
- 2 teaspoons baking soda
- ½ teaspoon salt
- 2 cups butter softened
- 1½ cups brown sugar packed
- ½ cup granulated sugar
- 2 3.4 ounce packages of instant vanilla pudding
- 4 eggs
- 2 teaspoons vanilla extract
- 4 cups white baking chips
- 2 cups chopped macadamia nuts
Preheat the oven to 350° (F). Line two large baking sheets with parchment paper or silicone baking mats.
In the bowl of your mixer, cream butter. Add brown sugar and granulated sugar. Beat until creamy and fluffy. Add the eggs one at a time, mixing after each addition. Add vanilla extract. Mix.
In a large bowl, add flour, pudding mix, baking soda, and salt. Mix with a whisk until combined. Add flour to the wet ingredients a cup at a time. Mix until well combined.
With the mixer at low speed, add the white baking chips and nuts.
Drop the rounded spoonful of cookie dough onto prepared baking sheets. Place 2-3 white baking chips on the top of each cookie. Place the cookies on the center rack of the oven and bake for 10–12 minutes until the edges are golden brown and set.
For perfectly baked cookies every time, switch the baking sheets from one rack to the other. This helps the cookies bake evenly.
Remove the cookies from the baking sheet and place them on the cooling rack. Store in an airtight container.
