Triple Berry Lemonade

Fresh squeezed lemons in a simple syrup with juice from plump ripe blackberries, raspberries, and blueberries combine to create an amazingly refreshing summer drink!

Ingredients
  

  • 4 cups of water divided
  • 1 cup sugar
  • 1 cup fresh squeezed lemon juice
  • 1 tablespoon finely grated lemon peel
  • 1 ½ cups frozen thawed, triple berry blend, or 2 cups fresh berries.

Instructions
 

  • If using frozen, thawed berries, place them in a strainer over a bowl and thaw. Be sure to capture the juice from the berries as they thaw.
  • In a large pot, bring 2 cups of water and sugar to a boil. Boil for 2 minutes, stirring occasionally. Remove from the heat. Stir in the lemon juice and lemon peel; cool.
  • In a blender, combine 1 cup of cooled lemon mixture and the thawed triple berry blend, or fresh berries, if using fresh; cover and process until well blended. Strain and discard the seeds. Pour the triple berry mixture, juice from the thawed berries and remaining water into the pot with the remaining lemon mixture. Stir well. Pour into a pitcher. Refrigerate until chilled. Serve on ice.
