Tater Tot Chili Cheese Cup Bites

These little bundles of joy bring together the crispy goodness of tater tots, the hearty warmth of chili, and the gooey richness of cheese in a mouthwatering fusion.

Ingredients
  

  • 60 Tater Tots - partially thawed
  • 1 cup grated cheddar cheese; or mexican blend
  • ¼ cup finely chopped yellow or white onion
  • ¾ cup canned chili with beans
  • 12 slices of jalapeños - fresh or canned
  • ¼ cup sour cream
  • 3 tablespoons of melted butter
  • ½ teaspoon garlic salt
  • Non-stick cooking spray
  • Cilantro for garnish optional

Instructions
 

  • Preheat the oven to 425° (F). Spray a 12 cup muffin tin with non-stick cooking spray.
  • Place 5 tater tots on the bottom of each muffin tin cup. Bake for 10 minutes. Carefully remove from the oven and place on baking rack or hot pad.
  • Using a "shot glass" or small "butter carafe", smash each cup of slightly baked tater tots into the shape of a cup, making sure that the bottom of each tater tot-lined muffin cup is completely covered.
  • In a microwave-safe bowl, melt 3 tablespoons of butter and garlic salt. Stir to combine. Brush the inside of each tater tot cup, making sure each one is well coated.
  • Place the tater tots back in the oven and bake for 14–17 minutes until each cup is golden brown and crispy. Remove from oven and place on baking rack again.
  • Fill each cup with 1–2 tablespoons of prepared chili. Top with 1–2 tablespoons of grated cheese. Return to the oven for an additional 5 minutes until the chili is heated through, and the cheese is melted. Remove from the oven, place on baking rack and cool slightly.
  • Carefully remove each chili filled tater tot cup, place on a serving tray, and garnish with sour cream, diced onion, jalapeños, and diced cilantro.
