Loaded Scalloped Potatoes For Two
Sliced fresh potatoes in a rich creamy homemade chive white sauce topped with cheese, bacon, and more fresh chopped chives to create a loaded scalloped potato dish for two.

- 4 - 5 medium size potatoes washed, peeled, and sliced
- 1/4 cup butter
- 6 Tablespoons All-purpose flour
- 1 - 1 1/2 cups milk
- 1/4 teaspoons onion powder
- 1/4 teaspoon garlic salt
- 1/8 teaspoon coarse black pepper
- 1 Tablespoons chopped fresh chives
- 1/3 cup grated cheese
- 2 Tablespoons crumbled bacon
- 1/2 Tablespoon chopped chives for garnish
Preheat oven to 350°
In a medium skillet, over medium heat, melt butter. Sprinkle with 6 Tablespoons of flour. Mix until well combined.
Slowly whisk in 1 cup of milk. Continue stirring until mixture thickens. Add additional milk as needed to create the desired consistency. (Should resemble a thick gravy)
Add onion powder, garlic salt, black pepper and chives. Stir to combine.
Prepare a small 8 x 5 or 10 x 6 baking dish with non-stick cooking spray. Layer potatoes in a circle around the dish starting around the edge and ending in the center.
Pour cream sauce over potatoes completely covering potatoes.
Sprinkle top with grated cheese, bacon, and additional chopped chives.
Place potatoes in preheated 350° oven and bake for 45 minutes until potatoes are tender, sauce is bubbly, and top is golden crunchy.
