Loaded Mashed Potato Cakes

Loaded Mashed Potato Cakes are a great way to use up leftover mashed potatoes. Loaded with bacon bits, sliced green onion, cheddar cheese, and sour cream, fried to a golden brown crisp! So tasty and so good!

Ingredients
  

  • 3 cups mashed potatoes
  • 1 cup shredded cheddar cheese
  • 6 Tablespoons all-purpose flour
  • 3 slices bacon crumbles
  • 2 Tablespoons melted butter
  • 3-4 sliced green onions
  • 1 egg slightly beaten
  • 1/4 cup sour cream
  • 1/8 teaspoon garlic powder
  • salt and pepper to taste
  • 3 Tablespoons Vegetable Oil
  • Additional Sour Cream and sliced green onions for garnish

Instructions
 

  • In a large bowl mix together mashed potatoes, melted butter, grated cheese, bacon crumbles, chopped green onions, garlic powder, flour, sour cream, salt, pepper, and egg.
  • Dust hands with flour and form mixture into patties.
  • Heat vegetable oil in a large skillet over medium heat. Carefully place potato cakes in hot oil. Fry patties until golden brown on both sides, 5 to 7 minutes. Serve with sour cream and garnish sliced onions.
