- ½ cup Italian Bread Crumbs
- ¼ cup diced white onion - or 3 tablespoons of dried minced onion flakes
- ½ cup grated Parmesan Cheese
- 1 large egg - beaten
- 2 cloves of garlic - minced.
- 1 Tablespoon of dried parsley flakes.
- ½ teaspoon Italian Seasoning
- Salt and Pepper to taste - about ¼ teaspoon of each.
- 1 lb. lean ground beef
- 2 Mozzarella Cheese Sticks-cut in half.
- 2 cups Store bought Pasta Sauce
- Chopped fresh parsley or basil as garnish
Preheat the oven to 425°F.
Line a large baking sheet with parchment paper or aluminum foil, sprayed with non-stick cooking spray. Set aside.
In a large bowl, combine ground beef, bread crumbs, chopped onions, grated Parmesan cheese, beaten egg, cloves, parsley, Italian seasoning, salt and pepper. Mix until combined.
Divide the mixture into four equal portions, then form each portion into an oval. Use your finger to press an indentation into the center of each loaf lengthwise, then place a halved cheese stick inside the indentation. Close the meat around the cheese stick.
Place each mini loaf on the prepared baking sheet. Spoon 2 tablespoons of pasta sauce over each mini loaf. Bake in preheated oven for 22-25 minutes each or until an internal temperature of 160°F is achieved. Top with more warm pasta sauce, sprinkle with parsley or chopped basil and cheese.
