Individual Mozzarella Stuffed Italian Meatloaf

Ingredients
  

  • ½ cup Italian Bread Crumbs
  • ¼ cup diced white onion - or 3 tablespoons of dried minced onion flakes
  • ½ cup grated Parmesan Cheese
  • 1 large egg - beaten
  • 2 cloves of garlic - minced.
  • 1 Tablespoon of dried parsley flakes.
  • ½ teaspoon Italian Seasoning
  • Salt and Pepper to taste - about ¼ teaspoon of each.
  • 1 lb. lean ground beef
  • 2 Mozzarella Cheese Sticks-cut in half.
  • 2 cups Store bought Pasta Sauce
  • Chopped fresh parsley or basil as garnish

Instructions
 

  • Preheat the oven to 425°F.
  • Line a large baking sheet with parchment paper or aluminum foil, sprayed with non-stick cooking spray. Set aside.
  • In a large bowl, combine ground beef, bread crumbs, chopped onions, grated Parmesan cheese, beaten egg, cloves, parsley, Italian seasoning, salt and pepper. Mix until combined.
  • Divide the mixture into four equal portions, then form each portion into an oval. Use your finger to press an indentation into the center of each loaf lengthwise, then place a halved cheese stick inside the indentation. Close the meat around the cheese stick.
  • Place each mini loaf on the prepared baking sheet. Spoon 2 tablespoons of pasta sauce over each mini loaf. Bake in preheated oven for 22-25 minutes each or until an internal temperature of 160°F is achieved. Top with more warm pasta sauce, sprinkle with parsley or chopped basil and cheese.
