Hot Pastrami and Swiss Cheese Sliders combine the smoky goodness of beef pastrami, the creamy richness of Swiss cheese, and the perfect blend of spices on a handheld sized bun!
Preheat the oven to broil high if your oven has that option. If not, regular broil is fine.
Line a large baking sheet with parchment paper.
Cut the slider rolls in half, or split in half. Place the bottoms and tops of slider buns inside-up on a prepared baking sheet.
Place in the preheated oven, set to broil, for 1–2 minutes until golden brown and toasted. Watch them carefully as they can burn quickly! Set on a cooling rack while you prepare the remaining ingredients.
In a small bowl, combine the mayonnaise and mustard. Mix to combine. Set aside for just a few minutes. Note: If preparing mustard spread in advance, keep covered and chilled in the refrigerator until ready to assemble the sandwiches.
In a microwave-safe bowl, melt butter. Add garlic salt or garlic powder, whichever you prefer, and stir to combine.
In a large skillet, over medium heat, add ¼ cup of water. Add the thinly sliced pastrami. Cover and steam for 2–3 minutes. Using tongs, turn the pastrami in the skillet. Cover again and continue to steam another 2–3 minutes until the water is mostly evaporated, and the pastrami is warmed through. Repeat the steam steps as needed.
Using a small spatula or butter knife, spread 1 hefty tablespoon of the mustard mayo on the inside of the top and bottom of each bun. On the top of each slider half, place half a slice of Swiss cheese directly on top of the mustard sauce. On the bottom of each slider half, cover with equal amounts of steamed pastrami.
Return the baking sheet back into the broiler for 1 minute or until the cheese is melted. Carefully remove the pan from the oven and place it on a large cooling rack, wood cutting board, or hot pad.
Using a spatula, or tongs, flip the tops onto the bottoms so that the melted cheese is resting on top of the pastrami covered bottom buns.
Using a pastry brush, brush the top of each bun with the melted garlic butter. Sprinkle each one with Everything Bagel seasoning and pop back in the broiler for 1–2 minutes, until the tops are lightly golden brown. Serve warm.
Notes
You can add dill pickle slices to the sandwiches before placing the sliders together.
