Disney's Non-Alcoholic Passion Fruit Julep

A Non-Alcoholic version of Disney's Passion Fruit Julep! It's light and fruity with subtle hints of fresh mint, from the homemade mint simple syrup, with just a splash of fizz from club soda. It's the perfect refreshing summer drink!

Ingredients
  

  • 2 cups Passion Fruit Juice I used Welch's, any Passion Fruit Juice will work
  • 4 Tablespoons Simple Mint Syrup
  • 7.5 ounce Club Soda
  • 2 Cups crushed ice
  • Mint for garnish

Simple Mint Syrup

  • 1 Cup Sugar
  • 1 Cup Water
  • .75 ounces of fresh cut mint one .75 oz. package

Instructions
 

  • How to Make Simple Mint Syrup: In a medium sauce pan, over medium heat, add 1 cup water, 1 cup sugar, and mint. (Save one sprig for garnish)
  • Stir occasionally until mixture comes to a low boil and sugar is completely dissolved. Press a wooden spoon, or spatula, against the mint to release extra flavor. Remove from heat and cool 5-10 minutes, depending on how "minty" you want your simple syrup.
  • Place a coffee filter inside a strainer, over a medium size bowl, pour simple syrup through the strainer. Set aside, or place in air tight container and chill until ready to use.
  • To Make Mocktail Julep: For each 13 oz. glass add 1 cup crushed ice, 1 cup Passion Fruit Juice, 2-3 Tablespoon Mint Simple Syrup, and half a cup of club soda. Stir and Garnish with mint sprig.
