Chicken & Stuffing Zucchini Casserole

Rotisserie chicken, boxed stuffing, and garden fresh zucchini, carrots, and corn come together in this easy, delicious creamy and cheesy casserole. A great way to sneak those veggies past the picky eaters at your nest!

Ingredients
  

  • 1 package about 6 ounces herb-flavored stuffing mix
  • ½ cup 1 stick butter, melted
  • 2 cups cubed zucchini
  • cups chopped cooked chicken
  • 1 cup corn - frozen or canned
  • 1 can 10¾ ounces condensed cre4am of celery soup, undiluted
  • 1 cup grated carrots
  • ½ cup diced onions
  • ½ cup sour cream
  • 1 cup 4 ounces shredded Cheddar cheese

Instructions
 

  • Preheat oven to 350° F. Spray a 9 x 13-inch baking dish with non-stick cooking spray. Set aside
  • In a medium bowl, combine the stuffing mix and melted butter. Mix until combined. Remove one cup and set aside. Place the remaining stuffing on the bottom of your prepared 9 x 13-inch baking dish.
  • Combine the zucchini, chicken, soup, carrots, corn, onion, and sour cream in a large bowl. Mix until well coated. Spoon the chicken mixture over the stuffing in the baking dish; top with ½ cup of cheese and the reserved stuffing mix. Finish with the remaining ½ cup of cheese.
  • Bake 40–45 minutes or until heated through, and the cheese is melted.
