I carefully followed every instruction and purchased organic ingredients to make it healthy. This is the second recipe from scratch carrot cake. I knew something was wrong when I took it out of the oven and it wasn't fluffy like the last one. I didn't panic and went on to make frosting. I was so disappointed after I removed the frosting and layered on my cake. I knew at that it was not going to be what everyone bragged on in over 600 reviews. Now I have to remake the other recipe because I bragged to so many about the great carrot cake I was making. Don't get too excited by reading reviews until your product is finished.

I'm going to respectfully disagree with you over not believing the 600 reviews. If 600 reviews, and thousands on Pinterest, declare this to be the BEST carrot cake they've ever made and have followed the instructions, using the recommended ingredients, and it's turned out, and ONE person made it and it didn't? Hmmm...Where might the problem be?!! Next, the minute you stated you were making this a "healthy" version told me you deviated from the original recipe. Never fair to judge a recipe that didn't turn out right when you have changed the ingredients to make it "healthier". That's the risk that you, and any baker take when you make a choice to change things. Now I will say this...had you followed the recipe as written, including ingredients, you wouldn't have had to worry about all that bragging because you would have had the BEST CARROT CAKE in the world. I don't generally respond to post like this...but this is one RECIPE I stand by and always will! It's perfect! Sorry you had a bad experience experimenting with a tried and true recipe. I suggest next time finding a recipe that is for a "healthy" carrot cake. Best Baking Wishes.
