They say imitation is the sincerest form of flattery! So this is my attempt at a homemade Costa Vida or Cafe Rio Salad! I won’t say they taste identical…but it just is one delicious meal! The beauty of this recipe is that if your “men folk” don’t like salads…they can wrap that tortilla up and call it a “man-urrito”!
