To round out this week I wanted to share one of our favorite new frozen treats! Hand dipped chocolate frozen banana’s with toasted almonds! Usually a treat only found at fairs or amusement parks, I decided it was about time we brought this special treat home to roost! They are so “a-peeling!” (You didn’t think I could resist that pun did you?) You are going to love how simple these are to make and you are REALLY going to love how heavenly they are on a warm summer night!

This week is living proof that sometimes things just don’t go as planned! (Like a trip to the Emergency Room! Ugh!) When that happens you just have to pick yer’self up by the boot straps and keep on moving forward! So, when things aren’t going exactly how you planned, and you need a little sunshine in your life, I say start from the very beginning…Breakfast! What d’ya think? Would this beautiful mixed berry stuffed french toast chase away your blues? (Even though they’re “black”berries? Hmmmm!) It worked for me! I think it will work for you too!

We had a “Salmonque” last week and I had loads of left over salmon! So, I decided to switch up my favorite salad of all time…Cobb Salad! I think you’ll love this version as much as we do! Now that the 4th of July is over let’s go back inside the kitchen and make one of my all time favorite Mexican dishes! Fresh Homemade Chile Rellenos. There is nothing better than a Pepper stuffed with monterey jack cheese, covered in a light and fluffy egg batter, fried to golden perfection and topped with guacamole and fresh homemade salsa! YUM! Come on…let’s give it a try. It’s easier to make than you think! You’re family is going to love you for this!

It was a crazy weekend and my inner beast was craving some really GREAT Mexican food so I turned to my favorite Fajita recipe! Tangy Chicken Fajita’s is the perfect cure for that craving!
