I love Mexican food! (I think we have established that?) Love may be a little on the understated side as far as adjectives go. It’s more an obsession/adoration! The flavors, the smells…the CHEESE! It’s all there. During the week though… time is limited. So I put together this “easy” recipes for White Chicken Enchilada’s. The sauce is 3 ingredients and the Rotisserie chicken and packaged grated cheese make this dish a breeze to make!

As a food blogger I see hundreds of new recipes every week. It’s just part of the job, and one I absolutely enjoy. I love seeing what other bloggers are busy creating in their kitchens. Last week I spotted this luscious looking dish! Everything about it looked amazing! From the crispy golden pan seared chicken thighs (I love the flavor of chicken thighs) to the scrumptious sweet honey garlic sauce! The word “Easy” was thrown in for added enticement and I took the bait! I’m SO glad I did! You will be too! This is one amazingly easy, flavorful, and inexpensive dish! You have got to try this one friends! Trust me. You do don’t ya?
I love food! All food…but I really love comfort food! I know… it’s a word that’s tossed around a lot in the blogging world, but in all fairness, I have to say that the majority of foods fill a need. For some it’s comfort, for others happiness, joy, sorrow, sadness, or stress. I mean food feeds our emotions, as well as our bellies! If it didn’t there wouldn’t be so many foodies out there all looking for that one optimal dish.
One of my favorite “comfort” foods is Chicken Pot Pie. Maybe it’s the memories of those little frozen pies by banquet when I was kid, or maybe it’s because the combination of ingredients is like Thanksgiving in a pie shell? Whatever the reason, it’s still a favorite. I spent years looking for the perfect recipe and then just decided to make my own. I wanted one loaded with “the good stuff”! Lots of meat, vegetables, and a creamy gravy, all packed inside the perfect flaky crust. I hope you’ll agree…this pot pie is the perfect “comfort food”!
We’re kicking Monday off right! I have the perfect easy weeknight recipe for your Nest. Easy Chicken Parmesan! I discovered this recipe years ago while sitting in the dentist office! (Yuck!) Of course I had to add my own twist and kick it up a notch or two, but it’s still super simple to throw together and it’s sure to be a hit at your dinner table!
Today I’m sharing one of my favorite pasta dishes! Angel Chicken Pasta with baked chicken on a nest of delecate angel hair pasta and topped with a delectably rich creamy golden mushroom and white wine sauce topped with parmesan cheese! In a word…DELICIOUS! This version is made in the crock pot, but don’t let that fool you into thinking it’s just another “every day” meal! This dish is elegant enough to serve to company. You are going to absolutely LOVE this dish! The flavors are out of this world!
