I love a Quick and Easy Chicken Casserole!

Easy Dorito Casserole

Especially on busy days when everyone is running fifty different directions. So when I find a dish that the whole family can enjoy…well that my friends is a weeknight homerun round the ol’ dinner table!

A few months ago I ran across this Cheesy Chicken Dorito Casserole. I wish I could remember where I saw it, so I could give credit where credit is due! Anywho… I had to try it. It just sounded so good and bonus… it’s so simple to make!

This dish reminds me of a Green Chili Chicken Tamale or Enchilada type casserole. With just a few ordinary pantry staples, a bag of Nacho Cheese Doritos, and a few cups of cooked chicken you can whip this main dish up in no time.

How To Make Cheesy Chicken Dorito Casserole

Preheat oven to 350° and prepare a 9 x 13 baking dish by spraying it lightly with non-stick cooking spray. 

In a large bowl combine 3 cups cooked chicken, chopped, or you could use rotisserie chicken and save even more time.

Tip: I like to pre-cook large batches of chicken in my Instant Pot and freeze it in 3 cup quantities. Just enough for most casseroles. 

Add 1/8 cup dried minced onions, or 1/4 cup fresh minced onion. Either will work in this recipe and since keeping it quick and simple was the main goal…I go with dried onions. 

Add in 1/2 teaspoon salt, 1/2 teaspoon pepper, and 1/2 teaspoon garlic powder.

To that mixture add 1 cup sour cream, and one standard can cream of chicken soup, and one coup of shredded cheddar cheese to the chicken and seasonings.

Next up…one can of corn, drained. You’ve got the filling for this Chicken Casserole. Easy Peasy right?

Mix everything together until well combined. If you want a little more “warmth” or “heat” you can add 1 can of diced green chili peppers. I didn’t add peppers, but they would be great in this dish!

Creamy Chicken Dorito Casserole Filling

Bringing it all together…

Crush one medium size bag of Nacho Cheese Doritos. How finely you crush the Doritos is completely up to your individual tastes and the kind of day you’re having! Lol 

I made mine small since I had little kids coming over for dinner…well, that and it had been a stressful day! Might have gotten a tad carried away with my chip crushing skills.

Place half the crushed Doritos’ in the bottom of the prepared casserole dish.

Pour the chicken mixture over the layer of crushed Doritos. Top with another cup, or a little more, of shredded cheese. I’m part mouse (the “Minnie” kind…not the other beady eyed kind) and I love a cheesy casserole! So I always add extra cheese!

Top the casserole with the remaining crushed Doritos. I know those crunchy chips look a lot like corn flakes in this photo…but I promise it’s Doritos!

Bake in preheated oven for 35–40 minutes or until bubbly and all the scrumptious cheese is melted! Allow to cool slightly before serving.

This is such a yummy family friendly casserole. The Dorito layers stay nice and crispy and the chicken corn layer is so creamy. 

A pan full of  Buttery Sweet Cornbread would go with this beautifully and a fresh tossed garden salad!

Ingredients

  • 3 cups cooked chicken, chopped, (can use rotisserie chicken)
  • 1 cup sour cream
  • 1 can cream of chicken soup
  • 1 can of corn, drained
  • ¼ cup minced onion
  • 2 cups cheddar cheese, shredded
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • ½ teaspoon garlic powder
  • 1 medium size bag of nacho cheese Doritos , crushed

Instructions

  1. Preheat oven to 350°
  2. Lightly spray a 9 x 13 baking dish with non-stick cooking spray.
  3. Reserve one cup of cheese. In a large bowl mix together chicken, sour cream, soup, corn, minced onion, 1 cup of cheese, salt, pepper, and garlic powder.
  4. Mix everything until combined.
  5. Spread bottom of pan with half the bag of crushed Doritos. Pour chicken filling over crushed chips. Top with remaining grated cheese. Finish by spreading remaining crushed Doritos over cheese.
  6. Bake for 35-40 minutes until cheese is melted and casserole is bubbly.

My family is not a big fan of corn, do you think I could sub in diced tomatoes with green chilies drained instead?

Hi Shelly! If they are really well drained, yes, I would think you could. Another suggestion would be to add a can of drained black beans instead of the corn. It might do better than the tomatoes. Hope this helps. Norine
