Grilled Mediterranean Chicken Sandwich Recipe

Today, I’m excited to share a scrumptious recipe for a Mediterranean Chicken Sandwich that will transport your taste buds straight to the sunny shores of the Mediterranean Sea. (Doesn’t that sound wonderful!)

Mr. Nest and I are always looking for new eateries to try! A few weeks ago we stumbled upon a new little drive-thru place here in our quaint country town. I was instantly drawn to a Mediterranean Chicken Sandwich. (Hey…it’s as close to a summer vacation as I’m going to get this year!)

The sandwich was loaded with the unique flavors of the Mediterranean, and one of the BEST chicken sandwiches I’ve ever eaten! I was swooning with every bite. Recreating that sandwich was a must.

While mine may not be an exact replica…the fresh dill sauce is receiving rave reviews at this Nest…and the sandwich is a new favorite!

What You’ll Need to Make a Mediterranean Chicken Sandwich

  • 2 large boneless, skinless, chicken breast – butterflied & tenderized
  • 1½ cups Greek Salad Dressing – store bought or homemade
  • 4 Brioche Hamburger buns, Ciabatta Rolls, French bread, or favorite bun.
  • Large Tomato – sliced thinly
  • Red Onion – sliced thinly
  • 2 cups Spring Mix
  • ¼ cup feta cheese crumbles – more if desired

For the Sauce

  • 1 medium cucumber, divided. One half seeded, and coarsely chopped, the other half sliced thinly for sandwich topping.
  • 1 Cup Plain Greek Yogurt
  • 1 Tablespoon Olive Oil
  • 1½ teaspoons minced garlic
  • 1 Tablespoon chopped fresh dill
  • 1 Tablespoon fresh lemon juice
  • ¼ teaspoon salt, pepper, garlic powder, & onion powder
  • 1 cup Mayonnaise

How To Make The BEST Creamy Dill Sauce

Let’s start with the most AMAZING flavor filled, fresh Dill Sauce, to ever grace a sandwich! This isn’t a “true” Taztiki Sauce, but it is loosely based on it…and it’s excellent!

This sauce is so good you can use it on Salmon, a veggie sandwich, and of course, this delicious Mediterranean Chicken Sandwich. You’ll want to keep it stocked in your refrigerator this Summer.

In a food processor, or blender, add Greek yogurt, half of the cucumber, chopped and seeded, minced garlic, olive oil, lemon juice, salt, pepper, garlic powder, onion powder, and 2–3 sprigs of dill.

TIP: You do not need to chop the fresh dill…just toss the “weed like” herb in the blender!

TIP: You can substitute dry dill for fresh dill. I do prefer the flavor of the fresh, but if you don’t have it on hand, you can use dried.

Once all the ingredients are blended together, until semi-smooth. Pour the sauce from the blender, or food processor, and place in a medium size bowl. The sauce will be very thin. Not to worry we are about to thicken it up.

Add the mayonnaise, and stir to combine. This will thicken the sauce and turn it into a spread. If mixture isn’t the consistency you’d like for spreading, add more mayonnaise.

Cover bowl, or transfer to a storage container, and chill until ready to use. I suggest chilling at least an hour before serving. This allows the mixture to thicken and the flavors to get to know each other a little better!

How To Prepare Chicken Breasts for Sandwiches

To make four chicken sandwiches you will need two large, boneless, skinless, chicken breast.

TIP: I do not recommend using rotisserie chicken, or any pre-cooked chicken, for this recipe. The flavor of grilling the marinated chicken is the key to the success of this sandwich!

To butterfly the chicken breast, use a sharp carving knife, and carefully slice the chicken breast in half, lengthwise, by lightly placing one hand on top of the chicken breast, and slicing the breast in half, beginning with the thick end of the breast. Please use caution when butterflying any cut of meat!

Once both chicken breasts have been butterflied, cut them half, to create four separate filets.

Place each filet in a quart size freezer Ziploc bag, or two pieces of plastic wrap, and pound them flat with a meat tenderizer. We call this discount therapy at our Nest! Works beautifully! Try to remember we’re not killing the chicken again!

Place prepared chicken breast in a large, gallon size, Ziploc bag. Add Greek Salad dressing! If you can’t find Greek salad dressing, you can substitute with Italian.

Zip the bag closed. Give it a good shake, squish it around, making sure the marinade covers all the chicken.

Place bag inside a large bowl, just to protect your refrigerator, leaks are no fun… and chill for at least one hour, or until ready to grill chicken.

Grilling Chicken for Greek Sandwiches

Preheat grill, or skillet, to medium-high heat!

Remove chicken from marinade and place on preheated grill, or skillet.

Chicken on hot skillet or BBQ grill, cooking.

When the edges begin to turn golden brown, using tongs, turn chicken over, and cook the other side. Cook until juices run clear. About 6 – 8 minutes per side.

When chicken is thoroughly cooked, remove from grill, and place on a plate.

How to Assemble Mediterranean Chicken Sandwiches

One of the best parts of this sandwich, beyond the incredible flavors, is how easy they are to assemble!

I suggest that before you assemble each sandwich, you place all the ingredients on a board. This makes everything handy and easy for assembly.

Begin with your favorite bun!

I love a good buttery brioche bun for these chicken sandwiches, but you can use a ciabatta roll, French bread, or other type of bun or roll.

Toast the buns, or leave them as is. Spread a layer of fresh homemade dill sauce on the top and bottom bun! The amount of spread is completely up to personal preference.

On the bottom bun, sprinkle with about 1 – 2 Tablespoons of feta, top with a handful of spring mix, and follow that with a piece of juicy grilled chicken.

Place thin slices of cucumber on the top half of bun with the dill sauce, followed with red onions, and thinly sliced tomatoes.

Answers to frequently asked Questions

  • Can ground chicken patties be substituted for the whole chicken breasts? Yes! You will want to flavor the meat though. I would simply add several tablespoons of the Greek dressing to the ground chicken, or turkey, and mix it in before forming patties and grilling.
  • Why add Mayonnaise to the yogurt dill sauce? It helps add a level of creaminess to the dill sauce, and tones down the tartness of the plain Greek yogurt. In addition, it thickens the sauce, making it more of a “spread”.
  • I’m not a fan of cucumber. Do I have to add it to this recipe? Like any recipe, I can only speak to the full-bodied flavors that come from each ingredient I use when creating the original recipe. However, you don’t have to add cucumbers if you’re not a fan. I love the “fresh” cool taste it adds to this sandwich. I’m always going to encourage you to be creative when making my recipes, and make them to suit your tastes.
  • How long do I have to marinade the chicken? I recommend at least 30 minutes, but you can marinade it overnight, up to 24 hours.
  • What makes a dish “Mediterranean”? Essentially, Mediterranean cuisine is made up of plant foods, like cucumbers, onions…and where herbs and spices are essential ingredients. Herbs like “dill” and “Basil”.

Ingredients

  • 2 large boneless, skinless, chicken breast - butterflied & tenderized
  • 1½ cups Greek Salad Dressing
  • 4 Brioche Hamburger buns, or Ciabatta Rolls
  • Large Tomato, thinly sliced
  • Red Onion, thinly sliced
  • 2 cups Spring Mix
  • ¼ cup feta cheese crumbles

For the Sauce

  • 1 medium cucumber, divided. One half seeded, and coarsely chopped, the other half sliced thinly for sandwich topping.
  • 1 Cup Plain Greek Yogurt
  • 1 Tablespoon Olive Oil
  • 1½ teaspoons minced garlic
  • 1 Tablespoon chopped fresh dill
  • 1 Tablespoon fresh lemon juice
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon garlic powder

Instructions

  1. In a food processor, or blender, add ½ the seeded and diced cucumber, plain Greek yogurt, olive oil, minced garlic, fresh dill, fresh lemon juice, salt, pepper, garlic powder, and onion powder. Process until semi-smooth.
  2. Pour mixture into a large bowl and add mayonnaise. Mix until combined. Cover and chill, until ready to use.
  3. Butterfly and tenderize two boneless chicken breasts. Cut into four pieces. Place chicken in a large Ziploc bag and add Greek Salad dressing. Marinade for a minimum of 30 minutes, up to 24 hours in the refrigerator.
  4. Preheat the BBQ grill, or stove top skillet, to medium-high heat. Place marinated chicken on preheat grill. Grill each side 6 - 8 minutes or until juices run clear. Remove from heat.
  5. Toast buns if desired.
  6. Spread dill sauce on the bottom of the bun. Top with 1 - 2 Tablespoons of Feta cheese. Add a handful of spring mix. Top with a piece of grilled chicken. On top of the chicken place 1 - 2 slices of tomato, and sliced onions. Spread the inside top of the bun with more dill sauce. Add thin slices of cucumber. Bring two halves together, top and bottom, and serve while warm.
