Sausage Gravy over Biscuits with scrambled eggs.

Start your morning right with this comforting and savory homemade sausage gravy recipe. It is such a hearty and delicious dish that can be served for any meal of the day.

I have to admit I’m late to the “Sausage Gravy” party! Yes! You read that right. I’m a latecomer to this particular breakfast favorite.

It’s not that I hadn’t ever heard of this down home Southern Comfort, popular dish. I had. In fact, Mr. Nest, and my kids, order it regularly when dining out for breakfast. For some reason, I just couldn’t wrap my head around “gravy” for my first meal of the day.

The beauty of being a woman is that we can change our minds! Which I do often enough to be annoying, and decided to give it a try with this dish! Boy, am I glad I did! I love it! I’m sad I wasted so much time looking down my nose at it.

Whether you’re serving it over my freshly baked Baking Powder Buttermilk Biscuits, which I highly recommend, or crispy hash browns, this gravy promises to bring warmth and flavor to your table. Let’s dive into how easy it is to whip up this delicious breakfast treat!”

  • 1 pound ground pork sausage
  • ¼ cup all-purpose flour
  • 3 cups milk
  • ½ teaspoon salt
  • ¼ teaspoons ground black pepper
  • ¼ teaspoon onion powder
  • ¼ teaspoon garlic powder (optional)
Ingredients for homemade sausage gravy recipe.

In a large deep skillet over medium-high heat, brown and crumble the sausage.

Browning pork sausage.

Turn the heat down to medium.

TIP: DO NOT DRAIN THE SAUSAGE! We need that extra fat to make the roux for the gravy!

Sprinkle ¼ cup of flour over the top of the cooked sausage.

TIP: Most recipes call for you to remove the sausage first, then make the “gravy”, then add the sausage back in. NO! We do not need to do that with this version. This is a really easy recipe and works perfectly every time.

Add flour over the sausage a skillet on heat.

Stir the flour and sausage together until completely combined. This helps create the thickening agent for the gravy and will prevent lumps! It’s such an incredibly easy way to make gravy.

Pour the 3 cups of milk into the skillet with the coated sausage pieces.

Adding milk to sausage and flour mixture.

Stir the milk and sausage mixture over medium heat. The mixture will be very wet at this point. Not to worry, it will thicken quickly! Continue stirring while adding seasonings.

Stirring Milk and Sausage together in skillet.

Add salt, pepper, onion powder, and garlic powder. Stir it to combine.

Adding seasoning to the gravy mixture.

Stir the mixture constantly until it begins to thicken. Give that gravy a little taste to see if it needs more seasoning. This is the time to add more if needed.

If the mixture thickens too much, thin by adding additional milk, a few tablespoons at a time, until the desired consistency is reached. You can do this at any point in the process of making the gravy. I like to keep a little extra milk nearby if I need it.

The gravy mixture thickens on the stove top.

Allow the gravy to simmer for 5–10 minutes, stirring occasionally.

Look at that tasty thick savory sausage gravy! It’s so simple to make and so yummy! How could it have taken me this long to add this delicious recipe to my collection! I realize now my Mother deprived me of this delicacy my entire childhood! Lol

While biscuits are the traditional pairing, this hearty gravy also pairs perfectly with toast, hash browns, or even scrambled eggs. Basically, just smother that plate in its creamy goodness.

Gravy over biscuits and eggs.

Sausage gravy is best served warm over freshly baked biscuits, allowing the rich, creamy sauce to soak into the soft, flaky layers. For an extra touch of flavor, sprinkle on some black pepper, fresh parsley, or a dash of hot sauce.

With simple ingredients and my straightforward steps, you can recreate the hearty flavors of Southern cuisine right in your own kitchen.

TIP: Store any leftovers in an airtight container in the refrigerator for up to 3 days. This recipe re-heats perfectly in the microwave or stove top. If too thick, add a little milk to thin it out.

Whether enjoyed for breakfast, brunch, or even dinner, this creamy sausage gravy is sure to become a family favorite. Don’t wait like I did! A life of regret is no life at all! LOL

It was right within the post step-by-step instructions and ingredients list, just not in the recipe card...which is HUGE! Thank you so much for letting us know about this error. I hope you'll still give this wonderful recipe a try. Thank you again, Norine
