Easy Apple Almond Galette

If you’re in the mood for a deliciously simple dessert that highlights the natural flavors of the season with fresh fruit and nuts, this Easy Apple Almond Galette is just the thing!

With minimal ingredients and only a few steps, you’ll have a beautiful, elegant dessert that’s sure to impress, whether you’re baking for a holiday spread, dinner party, or a cozy night in. This dessert will be ready in minutes! I love how easy this dessert is to make and you will too!

If you’ve followed me for any time at all, you know I rarely use store-bought pie dough crust. However, to make this dessert as easy and quick as possible, I’m using it in this recipe!

Let’s gather our ingredients and get to baking!

  • 1 large apple peeled and sliced, or chopped – I prefer to use Granny Smith apples. They are great apples that are slightly tart and firm and perfect for baking.
  • 1 sheet of refrigerated pie crust – you can substitute it with a homemade pie crust if preferred.
  • 1 teaspoon lemon juice
  • 2 Tablespoons of apple jelly or apple butter
  • 1 Tablespoon of sugar
  • ¼ teaspoon cinnamon
  • ⅓ cup sliced almonds
  • ¼ cup butterscotch baking chips or cinnamon baking chips – I used butterscotch to add hints of caramel flavor to this galette.
  • 1 teaspoon milk – to brush the edges of the pie crust
  • 1 cup confectioners sugar – for icing
  • ¼ teaspoon almond extract
  • 1–2 tablespoons of milk

Before we begin, I think it’s important to define exactly what a Galette is and why it differs from a standard pie?

Galettes are baked on a flat sheet rather than in a pie or tart mold. They are more simply made and rustic in appearance. Most are filled with a thin layer of fresh seasonal fruit and can be made into any desired shape. I love how easy they are to create with just a few simple ingredients.

Preheat the oven to 400°(F).

PRO-TIP: Some apples are better for baking than others. Especially those that are more firm and tart. I recommend using Honey Gold, Fuji, Pink Lady, Granny Smith, Newtown Pippin, Cortland, and Braeburn.

On a large sheet of parchment paper, roll the pie dough into a 14-inch circle and transfer, with the parchment paper, to a large baking sheet.

You will finish making the galette on the parchment paper that has been placed on the baking sheet.

If you have sliced the apples, lay them in a circular pattern within 2-inches of the edge. Begin with the outer edge and work inward. If you chopped the apples, sprinkle them over the apple jelly on the dough.

In a small bowl, combine the 2 tablespoons of sugar with ¼ teaspoon of cinnamon and sprinkle it over the top of the fruit filling.

TIP: If you want more spice flavoring, you can substitute the cinnamon with pumpkin pie spice.

Sprinkle the cinnamon or butterscotch chips over the apple filling, followed by the sliced almonds.

Fold 2 inches of the edge of the crust over the filling by making small pleats all the way around the outer edge. To make the pleat, make a small tuck as you go around the crust. Press down each tuck before making the next tuck.

Make sure to leave an opening in the center. Don’t worry about the filling. It’s not going anywhere…just yet!

Brush the folded edge of the crust with 1 tablespoon of milk using a pastry brush. This will give the crust a nice golden brown finish.

Bake 25–35 minutes or until golden brown. Bake times may vary. I found I needed to bake mine for about 40 minutes to get the apples semi-tender.

Remove from the oven and transfer to a wire rack to cool. Isn’t it stunning! Simplicity is always best!

While the galette is cooling, make the icing by placing the confectioner’s sugar, almond extract, and 1 tablespoon of milk in a small bowl.

Using a wire whisk, combine until smooth. If the mixture is too thick, add a little bit more milk until the desired consistency is reached.

Using a spoon, drizzle the icing over the top of the galette with a back and forth motion, while the galette is still on the parchment paper. This will help keep the sticky mess a drizzled icing can create, contained!

Once the icing is set, transfer the galette to a serving dish, or serve it directly from the parchment paper. This is, after all, a “rustic” French/European dessert! We don’t need to get all fancy with this beauty! It shines on its own merits! Parchment paper and all!

The combination of warm, tender apples, toasted almonds, and buttery crust is truly irresistible.

Serve it on its own, or add a scoop of vanilla ice cream or a dollop of whipped cream for extra indulgence. You could even drizzle a little bit of caramel topping on that vanilla ice cream for an extra pop of flavor!

Ingredients

  • 1 - sheet refrigerated pie crust
  • 1 large apple, peeled, and sliced or chopped
  • 1 teaspoon lemon juice
  • 2 tablespoons apple jelly
  • 1 tablespoon sugar
  • ¼ teaspoon cinnamon
  • ¼ cup cinnamon baking chips, or butterscotch
  • ⅓ cup sliced almonds
  • 1 tablespoon milk

Icing

  • 1 cup confectioners sugar
  • ¼ teaspoon almond extract
  • 1 to 2 tablespoons milk

Instructions

  1. Preheat oven to 400° (F)
  2. In a medium bowl, toss the sliced or chopped apple with lemon juice.
  3. On a large sheet of parchment paper, roll the dough into a 14-inch circle. Transfer the dough to a large baking sheet.
  4. Spread the apple jelly onto the crust with a pastry brush within 2 inches of the edge. Arrange apples on the crust. In a small bowl, combine the sugar and cinnamon. Sprinkle the apple filling with cinnamon sugar, baking chips, and almonds. Fold up the edge of the crust over the filling. Make sure to leave an opening in the center. Brush the folded crust with milk.
  5. Bake 20–25 minutes or until golden brown. Transfer to a wire rack to cool.
  6. In a small bowl, mix the icing ingredients, using enough milk to reach the desired consistency. Drizzle over the tart.
