I’m feeling the after “Thanksgiving before Christmas” slump! Is this just a 2020 thing or does it happen every year?

I can’t remember. I just know my “to-do” list is growing longer and longer! Every Holiday Season I swear I’m going to take more time and slow down! Watch loads of Hallmark movies and eat way too many sugar cookies.

Never happens! NEVER! Course I realize that I have to MAKE it happen! It just isn’t my nature to slow down. Which brings me to this recipe. Stuffed and wrapped cheesy mushroom bundles! With everything going on I want quick and easy appetizer recipes…so I can munch on them on Christmas Eve.

Every year for Christmas Eve our tradition is appetizers and soup! I know it sounds silly, but we love it. I’m always searching for new appetizers to add to our line-up.

I found this recipe in a Pillsbury Holiday Recipe Booklet! You know, the ones at the grocery store check-out lane. I love mushrooms…so when I saw this one stuffed with savory cream cheese and wrapped in golden flakey puff pastry I said to myself “I’m in! This is a must-try!”. Not only are they out of this world, they only require 4 simple ingredients! So how does an official appetizer eater say “No” to that?!

How To Make Cheesy Mushroom Bundle Appetizers

Preheat oven to 400 °F.  Line a baking sheet with parchment paper or silicone mats.

You’ll need 24 (1-inch) mushrooms. Clean each mushroom and remove the stems. Small mushrooms are easiest to wrap in puff pastry.

TIP: When working with whole mushrooms you should ALWAYS clean them before cooking with them. You can wash the mushrooms to rinse off any dirt…but do not let them soak in water and only wash them right before cooking. Dry with paper towels.

Fill each mushroom cap with 1/2 teaspoon cream cheese.

I use Cream Cheese with chives and onions…but get creative. A vegetable cream cheese would be delicious as well as a jalapeño cream cheese. Lots of options to put your own spin on this delicious appetizer!

How To Wrap Mushrooms in Puff Pastry

On a lightly floured surface, roll one sheet of puff pastry into a 15×10 inch rectangle. Cut into 24 (2-1/2 inch) squares.

TIP: Puff pastry takes about 20 minutes to thaw at room temperature.

For each bundle, place 1 filled mushroom in the center of 1 pastry square.

Puff pastry cut into squares for mushrooms.

Draw the four corners of the puff pastry square up to form a small bundle. Firmly pinch the center to form a small knob, or you can just overlap the pastry.

Place each bundle on an ungreased cookie sheet, or a baking sheet lined with a silicone baking mat or parchment paper to prevent sticking.

Brush each bundle with 1 slightly beaten egg. This creates a beautiful shiny texture to the top of each mushroom bundle.

Bake in preheated 400° oven for 12 to 15 minutes or until golden brown. I love watching that puff pastry do its thing! Layers of flakiness, and crispy melt in your mouth YUM!

Cool appetizers for 5 minutes before serving. The mushrooms and melted cream cheese are VERY hot, so it’s a good idea to let it cool for a few minutes before burning your guests mouths! I find that it’s not a great hostess move blistering the roof of your guests mouths! So I don’t recommend you do it! Cooling is Crucial!

Make-Ahead Tip: You can make the bundles up to 12 hours ahead of time; cover and refrigerate them. Brush the bundles with egg just before baking them.

These really truly are the easiest-ever Holiday Appetizers you can make for your Celebrations this season. Whether it’s a party for one, two, or seven, if you’re a mushroom lover…you’re going to love this scrumptious party food!
