I am no different than any woman out there! Sometimes I don’t feel like cooking either. Sometimes I’m tired and trying to come up with something new is a challenge. Sometimes I just want a big ol’ plate full of crunchy cheesy fully Loaded Nachos! Crispy corn chips piled high with shredded meat, two kinds of melted cheese, black beans, fresh Pico de Gallo, Sour Cream, Fresh Guacamole, Olives…do I have your attention yet? Face it….Nachos are such a delicious guilty pleasure and a fun easy meal…sometimes! lol

Friends this is the post I thought would NEVER happen! Not because it is earth shattering…it’s corn salad for Pete’s sake…but because I thought that nasty stomach bug had set up permanent residence here at this Nest! I’m still not 100% confident in saying it got the “evacuation notice”? I’m just happy to say this Frito Corn Salad is making it’s long over due Grand Debut!!! This salad is a MUST have for your recipe book. Once you make it…it’s here to stay…kind of like that dang bug! lol
I’ve got the perfect burger for your Memorial Day Weekend, or for that matter…any outdoor summer BBQ you’ve got planned! What’s better than a bacon cheeseburger? An “Inside Out” Bacon Cheeseburger! That’s right…let’s take delicious lean ground beef and stuff it with cheddar cheese and bits of crispy bacon? Then let’s load that beauty with all our favorite toppings…ripe tomatoes, green leave lettuce, red onion, pickles, and creamy avocado. I think it’s the perfect way to say “Hi Summer! I love puff pastry. It is not something, however, I will EVER make from scratch. I’m just not that insane….yet! I think one of the most mouth-watering experiences is walking into a pastry shop with every kind of magical danish calling to you from behind the glass. You just know it will be love at first bite. These little Cherry Cream Cheese Knots are just that type of Danish and best part…You made them!

Spectacular? Luscious? Flavorful? I have to go with “All of the Above”! A year ago I discovered I had a secret Quiche lover living at my house. You’ll never believe who it was? I’m still in shock! So just to test if they truly were as much a Quiche lover as they claimed to be…I made this ultra delicious loaded vegetable Quiche. Three slices later it…yup…it passed the test! Quiche is a perfect brunch dish. It’s easy to make yet elegant to serve!
If you want to elevate your brunch game, and who doesn’t… you have got to try these amazing light and flaky buttermilk scones! I made them for my Mother’s Day Brunch. To say they were the most delectable scone I have ever had would be an understatement. What I love about this scone recipe is how easy it is to make with ingredients you probably have on hand. Honestly this recipe will not disappoint. I promise! (I take scone promises VERY seriously!!!)
I love Lemon Curd! What I don’t love is the work involved in making it. I’m not a big fan of any recipe that calls for a “double-boiler”. I cringe just typing it. I know when I hear the word “double-boiler” it means there will be a lot of time and attention required to make that recipe. So when I ran across this recipe for Lemon Curd made in your Microwave…I was SO excited. I was a little worried how it would turn out…I didn’t need to be…it turned out AMAZING! The BEST Lemon Curd EVER!
