I’m pretty sure we all have an “inner” Cookie Monster. Our love affair with Chocolate Chip Cookies start at a young age. There isn’t anything better than an rich and chewy cookie loaded with ooey-gooey melted chocolate and an ice cold glass of milk. I don’t like to brag about my recipes however…this is the exception. These cookies truly are the BEST! They’re perfection. Crispy and crunchy around the edges and chewy and moist in the center. This will become your “go-to” basic dough recipe. You can add anything you want to the mix…just be sure to use the basic mix!

They say necessity is the mother of invention. Nothing could be truer when it comes to this dish! My pantry was looking bare, and the last thing I wanted to do in this 90+ degree weather was head to town to shop! So I dug around and found that by combining four ingredients I could create an absolutely AMAZING grilled chicken recipe. This is my new favorite! I’m pretty sure it will be yours too!
I love the “new” poke cake fad. I think I love it because it’s like platform shoes, converse tennis shoes, bell bottom pants, swing dancing, or any fad that comes and goes…and comes back again! It reminds us of happy memories and good times. I think I was 8 when I had my first bite of “poke” cake. It was AMAZING! Only we didn’t call it “poke” cake. Times were simpler then…we just called it “Yum Yum Cake”. Why? Cause it was Yummy! It’s still one of my all time favorite cakes! I’ve changed things up a bit to give it a fun 4th of July look, but truthfully…it’s heavenly any time your lucky enough to have a piece.
It just wouldn’t be summer without a pot of these Cowboy Baked Beans on the table next to the grilled chicken and corn on the cob! Ya just gotta have some “stick to yer ribs” beans to make it a complete meal…at least at this nest ya do!
There’s no secret about my love of Mexican food! I seriously think I could eat it daily. One of my favorites…Chili Relleno’s. I’ve posted the recipe for the traditional way to make those little gems of happiness! However, sometimes time isn’t on my side and I need a “stand in” for the original. When that happens I turn to this amazing Chili Relleno Casserole! It is ready to pop in the oven in 15 minutes or less. Which is perfect on those super busy week nights. Careful…this one is a keeper!
Sometimes I just cut loose in the kitchen! (Call me a wild woman!) That’s exactly what happened a few weeks ago when I had some left over sweetened cream mixture from one recipe and decided to add it to the shortcake I was making. Pretty much created the World’s BEST Shortcake…cause who wouldn’t want bits of cheesecake blended in with their shortcake and then smothered in all the fresh berries summer has to offer! The lazy hazy days of summer! Remember being barefoot… dancing on the hot concrete… in front of the Ice Cream Truck to buy your favorite frozen treat? Me too! I L.O.V.E. Dr. Pepper! It’s my daily guilty pleasure. I also L.O.V.E. BBQ! So of course… I took the two and threw them together. What happened next was one big ol’ grill full of happiness, and a bunch of lip smacking, finger licking men! My husband couldn’t stop talking about this Cherry Dr. Pepper BBQ Chicken! I’m pretty sure the folks at your Nest won’t be able to either. Yep…it’s THAT good!
Growing up the only taco I knew was the “ground beef” taco! While I still love them it’s so much more fun to eat the “grown-up” tacos of the present day! Like these AMAZING flavorful, juicy, and tender Shrimp Tacos on a bed of colorful cabbage mix and topped with a lovely Cilantro Avocado Lime Crema Sauce! Yep…sometimes adulting is FUN! Sometimes… lol
One of the best things about summer is all the delicious fresh fruits and vegetables available. I especially love fresh fruits…blackberries, strawberries, pineapple, apricots, peaches, and plums. So many to chose from. Not too many things better on a hot summer day than a bowl full of cold fruit salad. Each bite packed full of amazing fruity juices. So the last thing we want to do is cover up all that fruit in a blanket of cream dips and dressing. Let’s allow the fruit to be the star! It’s spent months growing into perfection…it needs to shine.
