It’s that time of year when we stand around holding large zucchini wondering why we planted so much and what the heck we are going to do with it all?!!! I mean a human can only eat so much squash before they start turning green! So I came up with this beautiful and outrageously moist and tasty Lemon Zucchini Bread with Crumb Topping and Lemon Glaze! It’s my new favorite summer treat, and it’s a great way to use up that squash you’re holding!

You could grill a package of hot dogs…OR…you could grill delicious juicy shrimp marinated in orange juice, lime juice, spices and fresh chopped cilantro. Now I don’t have anything against hot dogs…I love’em as a matter of fact. However, if I’m given a choice…I’m going with the sea critters… dripping in flavor so good, I licked my fingers after every bite!
These Plump Tender Moist Buttermilk Breakfast Blueberry Muffins work better than an alarm clock to help you roll out of bed in morning, down the hall, and right into the kitchen! Then… after you eat 5 or 6… you can roll on out the door to work! It’s the perfect human – carb relationship! Makes me tear up a bit!
Is there anything better than a crispy deep fried chicken wing? YES! A grilled marinated chicken wing loaded with the warm rich flavors of summer and Mexico! Who knew a chicken could bring ya yummy vacation party in your mouth! Little bits of char mingled with bold citrus flavors and spices…who needs an airline ticket when you can just stay at home, watch the sun set from your back porch, and munch on a few amazing tasty wings!
One of the first main dishes I made, were these yummy easy ground beef enchilada’s. I was in High School and eager to make anything with hamburger that wasn’t “meatloaf” or “spaghetti”! We all have our limits! lol Years later…it’s still one of my very favorite quick tasty family meals. The only thing to change over the years? The enchilada sauce. I make my own now…but you can still use canned! This is a dish your family will love!
When it comes to Pie…I think the debate has been going on for decades…Cherry or Apple? I personally love them both. However, I do tend to think of “Cherry” as a “summer” pie and Apple as a “fall” pie! However, you think of them… this Traditional Cherry Pie made with Tart Red Cherries, a subtle sweet filling, and it’s ultra flaky crust will have you cheering for team Cherry! Unless you don’t like Cherries…and then my friend…you have much bigger problems than I can help with! lol
I decided to take the “plunge” and try my hand at a “No-churn” Ice Cream. I was intrigued with the simplicity of the recipe. I wondered if it could really be THAT easy? My kids ran a snow cone stand for over 6 years right out in front of our house! It was a great learning experience for all of us. Above and Beyond that…they made the BEST Snow Cones! The secret was our homemade snow cone syrup! With just three ingredients and an inexpensive snow cone shaver, you too can have a summer filled with these fun, flavorful treats!
