Cashew Chicken is one of my favorite Chinese dishes! This casserole is a great “stand-in” for that dish when going out to dinner isn’t an option…especially with a big hungry family! It’s one of my personal favorites. It can be made the day before and popped into the oven for a quick easy weeknight meal that the whole family will love. Not too mention, if your lucky enough to have any leftovers…lol…it makes for a great “re-heated” lunch dish!

It’s quick, easy, with simple ingredients, and can be made with any type of chicken. Boneless-skinless or bone-in with the skin. It’s up to you and what you know the chicks at your nest will like best. I love that this recipe has been around for generations and is still as good as it gets!

It’s that time of year when we stand around holding large zucchini wondering why we planted so much and what the heck we are going to do with it all?!!! When it comes to Pie…I think the debate has been going on for decades…Cherry or Apple? I personally love them both. However, I do tend to think of “Cherry” as a “summer” pie and Apple as a “fall” pie! However, you think of them… this Traditional Cherry Pie made with Tart Red Cherries, a subtle sweet filling, and it’s ultra flaky crust will have you cheering for team Cherry!
