School is starting! Yikes!!! How did that happen so fast? Seriously doesn’t it seem like we were just starting summer vacation? Ugh! Well…with school starting it’s time to get back into our dinner time routines. I know your family budget has been stretched to the limit getting those “little’s” ready for another exciting school year. Fear not…I’m the queen of budget meals and scouring the cupboards for one last meal before payday! One of my favorite dishes is this Classic Tuna Noodle Casserole I created years ago when things were a little tight…like my jeans! (How did they shrink that bad?! lol) This is 100% pure comfort food and a regular at this Nest during the “kid” years!

I love pizza. Hmmm…let me say that again. I LOVE PIZZA! I’m serious friends! However, I have struggled over the years to find a homemade crust recipe I love. So I resort to buying pizza from one of the pizza places in town. That’s okay every now and then, but sometimes I want to make my OWN pizza…at home. I finally found a solution and it means you can make a pizza ready to eat in under 20 minutes! It’s SO good!!! You’re welcome! lol
I love creating new recipes using leftovers. I hate waste…especially when it comes to food. I read some where recently that the cost of groceries has double over the last few years. I don’t think any of us can afford to throw good food away! So when we had some leftover steak a few weeks ago, I created this elegant and delicious creamy mushroom sauce with grilled steak and cheese filled tortellini. It’s Ah-mazing! A must try! I drool just thinking about it…course that could be an old age thing too! lol
They say necessity is the mother of invention. Nothing could be truer when it comes to this dish! My pantry was looking bare, and the last thing I wanted to do in this 90+ degree weather was head to town to shop! So I dug around and found that by combining four ingredients I could create an absolutely AMAZING grilled chicken recipe. This is my new favorite! I’m pretty sure it will be yours too!
There’s no secret about my love of Mexican food! I seriously think I could eat it daily. One of my favorites…Chili Relleno’s. I’ve posted the recipe for the traditional way to make those little gems of happiness! However, sometimes time isn’t on my side and I need a “stand in” for the original. When that happens I turn to this amazing Chili Relleno Casserole! It is ready to pop in the oven in 15 minutes or less. Which is perfect on those super busy week nights. Careful…this one is a keeper!
I L.O.V.E. Dr. Pepper! It’s my daily guilty pleasure. I also L.O.V.E. BBQ! So of course… I took the two and threw them together. What happened next was one big ol’ grill full of happiness, and a bunch of lip smacking, finger licking men! My husband couldn’t stop talking about this Cherry Dr. Pepper BBQ Chicken! I’m pretty sure the folks at your Nest won’t be able to either. Yep…it’s THAT good!
Growing up the only taco I knew was the “ground beef” taco! While I still love them it’s so much more fun to eat the “grown-up” tacos of the present day! Like these AMAZING flavorful, juicy, and tender Shrimp Tacos on a bed of colorful cabbage mix and topped with a lovely Cilantro Avocado Lime Crema Sauce! Yep…sometimes adulting is FUN! Sometimes… lol
I am no different than any woman out there! Sometimes I don’t feel like cooking either. Sometimes I’m tired and trying to come up with something new is a challenge. Sometimes I just want a big ol’ plate full of crunchy cheesy fully Loaded Nachos! Crispy corn chips piled high with shredded meat, two kinds of melted cheese, black beans, fresh Pico de Gallo, Sour Cream, Fresh Guacamole, Olives…do I have your attention yet? Face it….Nachos are such a delicious guilty pleasure and a fun easy meal…sometimes! lol
I’ve got the perfect burger for your Memorial Day Weekend, or for that matter…any outdoor summer BBQ you’ve got planned! What’s better than a bacon cheeseburger? An “Inside Out” Bacon Cheeseburger! That’s right…let’s take delicious lean ground beef and stuff it with cheddar cheese and bits of crispy bacon? Then let’s load that beauty with all our favorite toppings…ripe tomatoes, green leave lettuce, red onion, pickles, and creamy avocado. I think it’s the perfect way to say “Hi Summer! Let’s get this party started!” It’s totally “Smoosh” worthy! (If you don’t know what “Smoosh” worthy is…they hot dog table is over there…lol!)
It’s time to officially break out the grill folks! I sent Mother Nature an e-mail explaining she needs to keep her cold and snowy attitude to herself! It’s time to allow Spring and Summer their turn on the playground! Winter is in the “Time-Out” chair until further notice! It’s not her fault…I heard she is struggling with menopause and the hot flashes are killing her. I told her “Girrrrl…we all gotta deal!” So, it’s time for all the wonderful outdoor grilling recipes you and I both love.
