Sunday’s are pretty busy days at this Nest, and yet, I still want to have a fantastic hearty & delicious family meal to serve. Slow Cooker Beef Pot Roast surrounded by baby potatoes and carrots is a favorite at this Nest. I love that you can dump it, go, and come back to a scrumptious dinner that everyone will love! This is a great “beginner” meal for first time cooks or college students!

I thought I had tried every chicken casserole out there…then I ran across this delightful dish and my curiosity was piqued! I mean someone was making a casserole with Cracked Out Chickens? lol Okay in all seriousness…This is such an easy and delicious casserole. One that even your pickiest eaters will LOVE! It’s loaded with chicken, bacon, cheese, and tater tots. Ya know…all the good stuff! If you have 5 minutes…you have time to make this casserole!
Long grain white rice is combined with creamy chicken soup, broccoli, cheese, and of course tender juicy chicken. The combination creates the perfect dinner dish. One that is both classically delicious, and also easy to make. I may have taken liberties with two family favorites in creating this new comfort food! I’m entitled right? lol
I did it! I went over to the dark side! I took a perfectly innocent head of Cauliflower and turned it into the most AMAZING veggie and ham Fried Rice and topped it off with rich flavorful boneless skinless chicken thighs.I only have one thing to say… “This is Cauliflower?!!!” It’s gonna rock your socks my friends! Bonus…it’s LOW CARB! What is happening to me!
I absolutely adore Roasted Rotisserie Style Sticky Chicken. The kind you can order at your favorite restaurant, or purchase at your favorite market. Finding, and adapting, this recipe, that allows me to make it at home, was a huge “win”! Not only for me… but for all the chicks at this Nest! I know the “loves” at your NEST will enjoy this tender juicy, finger licking, chicken as much as we do.
As a Mom, and Grandma, I’m always looking for budget friendly dishes to make for our growing Nest of little grandchicks’s and their parents! My new Beef Smoked Sausage Casserole has it all! Delicious smoked beef sausage, hearty red potatoes, vegetables, smothered in one incredible rich creamy cheese sauce that will have ya wanting to lick the plate clean! This is 100% pure comfort food on a family friendly budget!
Confessions…This Nest is not loaded with traditional spaghetti lovers! (Including the head “chick”.) It’s true…I’m not a big lover of spaghetti. Oh, I made it while the kids were growing up and my husband loves it…but the rest of us? Eh! So I decided to go another direction…and let’s just say…everyone LOVED it!
I’ve been getting my “Italian on” the last week or so! Which is really interesting… because the only Italian running through my veins is when I eat pizza… or snarf down a piece of Tiramisu! Hmmm? Yep…I’ve been focusing on rich creamy sauces tossed with al dente pastas and delectable meats…like this Ah-mazing dish with it’s tender juicy Pork Tenderloin Medallions. Is it good? Let’s just say “somebody” had three servings…and it wasn’t me! Not because I didn’t want to…but because it was ALL GONE! lol You have got to try this one friends. It’s beyond delicious!
I’m always late to the party! Yep…I fought the “Low Carb” movement as long as I could. I decided if I was joining this party I was bringing my “A” game with this Salmon Bowl! Made on one baking sheet and served up in one bowl…this dinner for two is FANTASTIC! Have more than two? Double it! Easy Peasy! Get ready to be WOWED! This is not your typical “low carb” meal!
Winter is “cold and flu season”! I think everyone in my little country town is sick right now…including yours truly! I don’t know about you…but when I’m sick, I crave comfort food. I want a dish that wraps around me like a big puffy quilt and warms me from the inside out! Like this creamy delicious Chicken Biscuit Pot Pie. Chicken and vegetables topped with big fluffy cheddar biscuits! It will cure what ails ya!
