Cashew Chicken is one of my favorite Chinese dishes! This casserole is a great “stand-in” for that dish when going out to dinner isn’t an option…especially with a big hungry family! It’s quick, easy, with simple ingredients, and can be made with any type of chicken. Boneless-skinless or bone-in with the skin. It’s up to you and what you know the chicks at your nest will like best. I love that this recipe has been around for generations and is still as good as it gets!

You could grill a package of hot dogs…OR…you could grill delicious juicy shrimp marinated in orange juice, lime juice, spices and fresh chopped cilantro. Now I don’t have anything against hot dogs…I love’em as a matter of fact. However, if I’m given a choice…I’m going with the sea critters… dripping in flavor so good, I licked my fingers after every bite!

One of the first main dishes I made, were these yummy easy ground beef enchilada’s. I was in High School and eager to make anything with hamburger that wasn’t “meatloaf” or “spaghetti”!
