Easy Homemade Chocolate Covered Strawberries

I love this recipe. It creates the perfect velvety dipping chocolate made with semi-sweet chocolate chips. The chocolate sets up firm, yet is still soft, sticks to the berries, and won’t fall off when eating!

They are perfection! You’ll be surprised how easy it is to make this favorite dessert. Let me share my recipe for this classic year-round treat that is particularly delightful on Valentine’s Day!

  • ¾ cup semi-sweet chocolate chips
  • 3½ tablespoons butter
  • 1 tablespoon light corn syrup
  • 1 teaspoon vanilla
  • 1 lb large fresh strawberries, washed and patted dry

Wash the strawberries and pat dry. Line a large baking sheet with parchment paper.

In a medium-sized microwave-safe bowl, add chocolate chips, butter, and light corn syrup.

The butter adds more fat to the chocolate and helps create a nice smooth dipping chocolate. It makes the chocolate less sticky as well. Light corn syrup gives this chocolate glaze its beautiful shine, and also keeps it pourable and helps prevent it from seizing up.

Microwave at 50% power for 30 second intervals, stirring after each time. Up to 3 minutes.

Stir until smooth and creamy. The chocolate should have a beautiful shine to it. If the chocolate is too thick to dip, add a bit more butter into the mixture. About ¼ a tablespoon. This will help thin the chocolate to the desired consistency.

If the chocolate adheres to the back of a spoon, and is the thickness you’d like, then you are ready to add the vanilla and begin dipping your strawberries.

I like to grab the strawberries by the hulls and dip them into the melted chocolate. However, you can follow my tips below by using a toothpick.

Hold the berry above the bowl until the extra chocolate slowly begins to stop running off the berry.

Place the dipped berry on the parchment-lined baking sheet. Continue dipping until all the berries have been dipped.

This photo is a fantastic example of my need to thin the chocolate during dipping! The back row of berries, the chocolate was too thick. In the front row, you can see that I thinned it out slightly with just a touch of butter and the chocolate was perfect.

Don’t be too afraid to add a little butter to thin out your chocolate. I wish a little extra butter would thin me out!

Place any leftover melted chocolate in a Ziploc sandwich bag. Snip the tiny end of the bag off with kitchen scissors.

TIP: Don’t cut too much off the tip. I start with a little snip and then make the hole bigger if need be.

Drizzle the melted chocolate back and forth across each berry. If you want to add sprinkles, for a more festive look, add them now before the chocolate sets up.

Allow the chocolate coating to cool and the chocolate glaze to set until firm.

Store the dipped strawberries in a large airtight container in the refrigerator. They should hold, depending on how ripe the berries are, up to 3 days.

They can be frozen, but be aware the berries may be “mushy” when thawed. I personally don’t recommend freezing them.

Now for the tricky part…eating only one or two of these delicious treats! It can’t be done! I’ve tried and failed miserably. Sigh!

Ingredients

  • 1 lb. large, ripe, strawberries, washed and dried
  • ¾ cup semi-sweet chocolate chips
  • 3½ tablespoons butter
  • 1 tablespoon light corn syrup
  • 1 teaspoon vanilla

Instructions

  1. In a small ceramic microwave-safe bowl, add chocolate chips, butter, and light corn syrup. Set the microwave for 50% power and cook for 30 second intervals.
  2. Remove from the microwave and stir until smooth and melted. If needed, repeat cooking in the microwave until the desired consistency is reached. Up to 3 minutes.
  3. Add 1 teaspoon of vanilla and stir.
  4. Line a large baking sheet with parchment paper. Using a toothpick inserted into the top of each strawberry, dip the berry in the melted chocolate. Allow the excess to drip off before placing on a parchment-lined baking sheet.
  5. Place the remaining melted chocolate in a small Ziploc bag. Snip the end and drizzle it back and forth over the dipped strawberries to decorate. If you want to add sprinkles, now is the time to do it before the chocolate sets.
  6. Let the chocolate covered strawberries rest for 30 minutes until the chocolate is firm. Store the dipped berries in a large airtight container in the refrigerator.
